Tuna Arugula Super-Food Salad

I love to make easy and convenient meals.  I love it even more when these meals are made from all natural, healthy ingredients.  This tuna arugula super-food salad has healthy ingredients, doesn’t require any cooking, and tastes amazing!  I prefer to get as many organic ingredients as I can since it’s healthier and Publix sprays all their open produce with some sort of weird chemical.  Here are the ingredients you need:

  • Bag of Arugula
  • Small Pouch or Can of Tuna
  • Cucumber
  • Ripe Avacado
  • Shelled Sunflower seeds
  • Purple Onion (optional)
  • Your favorite Italian, fruit, or Balsamic Vinaigrette
  • Mayonnaise (optional)

First drain the tuna well and put it in a large bowl.  Now this next step is optional but I like to add just a little mayo to get rid of the fishy flavor of the tuna.

Next, skin and chop up a fourth of the cucumber, and a small amount of onion as the onion tends to overpower the other flavors.  Use your discretion here.  Cut up the whole avocado and add all veggies to the bowl.

Top with Arugula and sunflower seeds, and add a good amount of your favorite dressing such as Italian red wine vinaigrette.

Give it a good mix.  That’s it!  You now can enjoy a healthy and tasty tuna arugula super-food salad without having to cook or dirty up any pans.  On a side note, be careful about how much tuna you eat as it has trace amounts of mercury in it.  Too much mercury and you will lobotomize your brain into oblivion!  Actually, the experts say that the chunk light cheaper tuna has less mercury than the more expensive alternative.  So buy the cheap stuff and maybe only eat it a few times a week.  Check out the recipe card below.  Thanks for reading, enjoy!

Ingredients
  1. 2 Handfuls of Arugula
  2. 1 Small Pouch or Can of Tuna
  3. 1/4th Cucumber skinned and chopped
  4. 1 Ripe Avacado
  5. 1/8th of cup chopped Purple Onion (optional)
  6. Your favorite Italian, fruit, or Balsamic Vinaigrette
  7. Shelled Sunflower seeds
  8. Mayonnaise (optional)
Instructions
  1. Drain and add tuna to bowl, mix in a spoonful of mayo.
  2. Add chopped veggies and avocado to bowl.
  3. Add arugula and sunflower seeds followed by dressing.
  4. Toss your own salad!
Notes
  1. Tastes great with fruit vinaigrette and other dressings.
  2. You can mix it up by getting the Asian flavor tuna and adding a ginger dressing and bean sprouts.
