Super Easy Black Bean Tomato Salad

Here is an easy, healthy recipe that you can make without having to cook anything or dirty a pan. I love a good creative salad that strays from the norm. While I wouldn’t say this has anything exotic, it’s a nice change to the old lettuce and carrot ruse. Here is what you’ll need for this black bean tomato salad:

Salad:

  • 1 can of Organic Black Beans (drained)
  • 2 smaller on the vine Tomatoes or 1 large Tomato (chopped into cubes)
  • small handful of Cilantro (chopped)
  • 1 ripe Avocado (chopped into cubes)
  • 2 Green Onion Stalks (chopped)

Dressing:

  • 2 good squeezes of Lemon
  • Dash of Olive Oil
  • Dash of Salt and Pepper

You can use all natural Italian or fruit vinaigrette if you don’t want to make your own dressing. Just chop and mix all ingredients in a large bowl and you’re good to eat! Thanks for reading!
