Bacon Wrapped Turkey Meatloaf with Gouda Grits and Baked Asparagus

My original title for this recipe was Mmm Mmm Mmm, O00hh Wheee, but I thought it might confuse some readers. Since the wife and I have been avoiding red meat, we’ve started using turkey to make your typical red meat dishes like burgers, meatloaf, meatballs, and so forth.  Here is a unique bacon wrapped turkey meatloaf recipe that the whole family will enjoy and that’s easy to whip together.

Bacon Wrapped Turkey Meatloaf

Here is what you’ll need:

  • 1.25 lbs Ground Turkey
  • 1 pack Bacon (nitrate free if possible)
  • 1/2 cup Seasoned Panko Breadcrumbs
  • 1 Egg
  • 1/8 cup finely chopped Sweet Onion
  • 4 oz shredded Gouda Cheese
  • 3 cups Chicken Stock or Broth
  • 1 cup fast cooking Grits
  • 1 pack of Asparagus
  • Season Salt, Olive Oil, Salt, and Pepper

In a large bowl, mix ground turkey with egg, breadcrumbs, and chopped onion. You can make meatballs or larger meatloaf with this recipe. Using an ice cream scoop works great for meatballs or use your hands.

Heat the oven to 375 degrees and then line a cookie sheet with foil for easy clean up. I have a metal cooking stand (see picture) that I put on top of the cookie sheet so that the oil and grease will drip under the food and not cook in it. I highly advise on getting one of these! Form your mini meatloaf into the sizes that you choose and then fold a piece of bacon on top of each. Bake in the oven for 45 minutes.

Cut the stems of the asparagus, wash and then dry very well so that it doesn’t become soggy when cooking. Add to small cookie sheet and drizzle with olive oil. Sprinkle a light amount of season salt covering evenly.  Once the oven timer gets down to 15 minutes left, put the asparagus in with the meatloaf and start making the grits.

For the Gouda Grits (adapted from a Publix recipe), bring 3 cups of chicken broth to a boil.  Add grits, reduce heat to low and cover. Cook for 8 – 10 minutes and then remove from heat.  Add shredded Gouda, 1/2 teaspoon of salt and pepper, and mix.

Ingredients
  1. 1.25 lbs Ground Turkey

  6. 4 oz shredded Gouda Cheese
  7. 3 cups Chicken Stock or Broth
  8. 1 cup fast cooking Grits
  9. 1 pack of Asparagus
  10. Season Salt and Olive Oil
  11. 1/2 teas Salt and Pepper
Meatloaf
  1. Mix ground turkey, breadcrumbs, egg, and onion in large bowl.
  2. Form each meatloaf to the size of your fist and put on rack on top of cookie sheet.
  3. Add one piece of bacon folded on to each meatloaf.
  4. Bake at 375 degrees for 45 minutes.
Gouda Grits
  1. Bring chicken stock to boil.
  2. Reduce to low, add grits and cover.
  3. Cook 8 - 10 minutes until creamy and then remove from heat.
  4. mix in shredded gouda, salt, and pepper.
Asparagus
  1. Cut thick stems off and wash.
  2. Dry thoroughly and place on small cookie sheet.
  3. Drizzle with olive oil and shake on season salt.
  4. Add to oven with meatloaf when timer shows 15 minutes left.
Notes
  1. You can make this with turkey or ground beef.
  2. Make sure you buy the pre-seasoned panko breadcrumbs.
